Breakfast burritos rock. Eggs and seasonings and cheese and whatever else I love wrapped up in a tortilla for the most important meal of the day. Breakfast burritos are a go-to food for my Pilot when he needs to get out the door fast, and a convenient food for the rest of us when he’s gone on those multi-day trips. The burritos have also become my go-to for families with new babies or a parent with an illness because they can be quickly reheated for any meal or any snack.

Most of the time, I fill these burritos with:
- scrambled eggs
- pork sausage
- cheddar cheese

Mmmm, those look really good right now. Breakfast burritos are one of my favorites. Sometimes we’ll even have them for dinner. Lately, I love adding a li’l crunch by filling them, rolling them up, then frying them in just a smidge of butter… so not healthy but oh so good!
